Rose Masala Chai Spiced Bundt Cake

Ingredients
For the Cake:
Dry:
- 2 and 3/4 cups all-purpose flour
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 2 tsp ground Kolkata Chai Rose Masala Chai Mix (use a spice grinder or mortar and pestle)
- 1 cup unsalted butter, softened
Wet:
- 2 cups granulated sugar
- 4 large eggs
- 1 tsp vanilla extract
- 1 cup whole milk
- 1/2 cup sour cream
For the Cardamom Glaze:
- 1 cup powdered sugar
- 1/2 tsp ground cardamom
- 2–3 tbsp milk or heavy cream (adjust for desired consistency)
- Pinch of salt
Instructions
Prepare the Cake
1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a bundt pan, ensuring all crevices are coated.
2. Prepare the Masala Chai Spice: Grind the masala chai loose-leaf tea into a fine powder using a spice grinder or mortar and pestle. Sift if necessary to remove larger bits.
3. Mix Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and ground rose masala chai mix.
4. Cream Butter and Sugar: In a large bowl, use an electric or stand mixer to cream the softened butter and sugar until light and fluffy.
5. Add Eggs and Vanilla: Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract.
6. Incorporate Dry Ingredients: Add the dry ingredients in three additions, alternating with the milk and yogurt (starting and ending with the dry mix). Mix until just combined.
7. Bake the Cake: Pour the batter into the prepared bundt pan, smoothing the top. Bake for 45–55 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool in the pan for 15 minutes, then invert onto a wire rack to cool completely.
Prepare the Cardamom Glaze
1. Mix Glaze Ingredients: In a small bowl, whisk together the powdered sugar, ground cardamom, milk or cream, and a pinch of salt until smooth. Adjust the liquid for your desired consistency.
2. Glaze the Cake: Once the cake is completely cooled, keep on wire rack and drizzle the cardamom glaze over the top, letting it drip down the sides.
