Choose a non-dairy milk that has some fat, it'll help to cut through the spices and create a well rounded flavor profile. We suggest one of these:
soy milk
almond milk
oat milk
Yes! Natural sweeteners can be a great alternative to white sugar.

agave
Too strong
Add a splash of milk and repeat until the color lightens.
Too weak
Boil for 2-3 minutes more or add a pinch more of the Kolkata Chai blend.
